BBQ Chicken & Pineapple Tailgate Skewers

Sweet, smoky and just a little tangy, these skewers are easy to prep ahead and quick to cook once the grill is hot.

Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  • 1 fresh pineapple, cut into chunks

  • 2 bell peppers, cut into chunks

  • 1 red onion, cut into chunks

  • 1 cup of your favorite barbecue sauce

  • 2 tablespoons olive oil

  • Salt and pepper

  • Wooden or metal skewers

Directions

  • If you’re using wooden skewers, soak them in water for at least 30 minutes before grilling.

  • Toss the chicken with olive oil, salt and pepper. Thread the chicken, pineapple, peppers and onion onto the skewers, alternating ingredients as you go.

  • Preheat your grill to medium-high heat. Grill the skewers, turning occasionally, until the chicken reaches a safe internal temperature of 165°F.

  • During the last few minutes of cooking, brush generously with barbecue sauce and let it caramelize slightly over the heat.

  • Serve them right off the skewer or slide everything into a tray and let your tailgate crew dig in.

Tailgate tip: Assemble the skewers at home and transport them in a sealed container in your cooler. When you arrive, all you have to do is grill, sauce and serve.
