BBQ Chicken & Pineapple Tailgate Skewers
Sweet, smoky and just a little tangy, these skewers are easy to prep ahead and quick to cook once the grill is hot.
Ingredients
2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1 fresh pineapple, cut into chunks
2 bell peppers, cut into chunks
1 red onion, cut into chunks
1 cup of your favorite barbecue sauce
2 tablespoons olive oil
Salt and pepper
Wooden or metal skewers
Directions
If you’re using wooden skewers, soak them in water for at least 30 minutes before grilling.
Toss the chicken with olive oil, salt and pepper. Thread the chicken, pineapple, peppers and onion onto the skewers, alternating ingredients as you go.
Preheat your grill to medium-high heat. Grill the skewers, turning occasionally, until the chicken reaches a safe internal temperature of 165°F.
During the last few minutes of cooking, brush generously with barbecue sauce and let it caramelize slightly over the heat.
Serve them right off the skewer or slide everything into a tray and let your tailgate crew dig in.
Tailgate tip: Assemble the skewers at home and transport them in a sealed container in your cooler. When you arrive, all you have to do is grill, sauce and serve.
